Alentejan Black Pig Chorizo Linguine

Ingredients (2px)

  • 1 Alentejan Black Pig Chorizo (found in any Portuguese Deli)
  • 2 garlic cloves
  • half Onion
  • half Red Pepper
  • 4 tomatoes
  • cayene Peppers
  • smoked Paprika
  • 1/4 glass Oporto Wine
  • 1/3 white wine
  • olive Oil
  • 300g linguine (dry or why not make in on your own? 🙂 )
  • 50g parmesam Cheese

Method

Total time: 20 minutes

Start by cutting the chorizo, the onion, garlic, cayenne peppers and the tomatoes in small pieces. Then, slice the red pepper in thin slices. Get a pan, drizzle it with a little of the olive oil and put it in medium-high heat. After, put the chourizo in the pan and let it get golden. Once golden, drop the fine chopped onions and garlic let it get golden too. Its now time to drizzle it with the Oporto wine and let it get some soul. Season it with the smoked paprika, salt and pepper and the cayenne peppers. Once at your taste, add the chopped tomatoes and the sliced red pepper, after 2 minutes add the white wine and let it cook.

Cook the linguine al dente in water, salt and a little of olive oil. Once done, use the pan where the pasta was done and add half of the sauce. Mix very well. Serve and divide the remaining sauce between the two portions.

Finely grate over the parmesam.
